Grilled Shrimp Avocado Salad for Everyone!

After going Live on Instagram, I want to share my quick and easy recipe for this delicious salad!  It is refreshing, healthy, yet savory at the same time.  This has been a staple in our home for the past few summers… the hubbie loves it.

Note: You should throw in your favorite ingredients!  You will never go wrong.

Serves 2 hungry people

  • 1/2 lb. Grilled Shrimp (I skewer the shrimp and marinade them in olive oil, 1 minced garlic clove, salt & pepper)
  • 1 pint Cherry Tomatoes, diced
  • 1/4 cup Red Onion, diced
  • 1 Cucumber, diced
  • 1 Avocado (best kind of fat!), diced
  • 5 Mushrooms, diced
  • 1/2 cup Feta cheese crumbles
  • Olive Oil
  • 1 Lemon, squeezed
  • Salt & Pepper to taste


Grill the shrimp, toss with all ingredients!  Add Olive Oil, Lemon, Salt & Pepper to taste and … BOOM!
